In the early days, the cooked wheaten foods inherited by Taiwan had epitomized the essence of those in mainland China with distinctive flavor each. Among them, oil noodles was the best (commonly known as, "prawn mee" among overseas Chinese and "Soup Noodle" among Taiwanese). And one would never have enough oil noodles. | ||
Tradition has it that "Soup Noodle" originated in Fujian and Guangdong provinces, which was then spread to Southeast Asia and Taiwan. A chef was used to put medium well noodles and vegetables like bean sprouts into a bamboo sieve (bamboo spoon) and dip them in boiled water for a few seconds. One could hear the sweet sound of "chirp-chirp-chirp". Then the chef would prepare some unique sauces to put on the noodles. Thus, the tasty and al dente snack was completed. That was the origin of the name of "Soup Noodle". |

Before the retrocession of Taiwan, Wu-chu Chou, a resident in Luzhou, sold Soup Noodle outside the gate of Yonglian Temple with Wan-pao Yang, his apprentice. After the retrocession, Wan-pao Yang opened up his own noodle shop at the same place. Surprisingly, many were attracted to follow his example to learn how to make and sell Soup Noodle for a living. | ||
The biggest feature of Luzhou Soup Noodle is its "soup" which is stewed with pork bones and streaky pork for a long time totally without any MSG. Soup Noodle has been widely spread with its unique flavor. In particular, there are a dozen of so-called authentic Soup Noodle shops. And Luzhou is the area in the whole province which sells the most Soup Noodle, making it one of the most representative delicacies in northern Taiwan. |
